What Is Murcha?
Murcha is the traditional yeast starter that makes Himalayan grain ferments possible. Also spelled Marcha, it is a living mix of molds, yeasts, and friendly bacteria carried on cakes of grain flour and wild herbs, and it has started batches of Tongba and Chhaang across Nepal, Sikkim, Darjeeling, and Bhutan for generations. In the Limbu tradition it is called khesung.
One culture, three jobs
Regular brewing yeast can only do one thing: eat sugar and make alcohol. Murcha does three jobs at once, which is why Himalayan brewers can ferment plain cooked grain with nothing else added.
- The molds break the grain's starch down into sugar. This is the same job koji does for sake, and it is why Tongba needs no malt and no added sugar.
- The yeasts ferment that sugar into alcohol.
- The bacteria add the gentle tang that makes Tongba and Chhaang taste alive rather than flat.
Cook the grains, cool them, mix in the Murcha, pack it away warm, and the culture runs the whole ferment on its own.
Murcha Style or Easy Everest?
Yak&Brew packets come in two styles. Murcha Style is the traditional ferment: deeper, earthier, with more tang, the way it tastes in the hills. Easy Everest is our milder starter, blended for a cleaner, softer first batch and a more forgiving ferment for beginners. Both are real starters doing the same three jobs. If this is your first batch, start with Easy Everest. If you have had Tongba in Nepal and want that flavor back, choose Murcha Style.
How Murcha is used
Cook your millet or rice until tender. Let it cool to room temperature. Mix the starter through the grain, pack it into a clean, airtight, nonmetal container, and keep it warm while it ferments. Tongba can be enjoyed within about a week and deepens over the following weeks. Chhaang is ready sooner and is served chilled or at room temperature. Store unused packets sealed, cool, and dry.
Quick questions
Is Murcha the same as Marcha?
Yes. Murcha and Marcha are two spellings of the same word, and you will see both in books and research papers. It is one starter, not two products.
Is Murcha the same as regular yeast?
No. Baking yeast and beer yeast are a single cultured strain. Murcha is a whole community, including the amylolytic molds that turn grain starch into sugar. A packet of regular yeast cannot ferment cooked millet on its own. Murcha can.
Does Murcha contain alcohol?
Murcha itself is a dry ingredient and carries no meaningful alcohol. The alcohol forms later, in your ferment, at home.
